I got playful again with the salmon by tossing it in some simple Asian Ingredients inspired by this Thai Salmon Recipe. I loved the result of the dish- very simple and satisfying. It took me less than 20 minutes to make and it was delicious and KID friendly the little ones loved it. As for the veggies, I just chopped and tossed in coconut cooking spray red bell peppers, Zucchini and a handful of chopped baby spinach leaves. Quick, Simple, tasty and healthy….
2 TB Soy Sauce, Thai Sweet chili Sauce, Fish Sauce, Sesame Oil and garlic mix it and marinade for 20 minutes. Than lightly add EVO to a pan and brown the top part of the Salmon only – this allows it to cook through without over cooking your Salmon by turning it over. It should still have a nice dark pink color inside. Reserve the marinade to add to the fish when you remove it from the pan.
For veggies- I chopped red bell pepper, 2 Zucchini, and handful of baby spinach- saute in Coconut cooking spray on low- for 20 minutes just until the bell peppers are soften. Do this veggie and Zucchini first than near done add Spinach just until wilted.
