Maple Mustard Chicken Thighs

So tasty!  I tasted the mustard in this but my husband said he couldn’t taste the mustard…so there you go.   I didn’t grill them as instructed in the recipe due to it looking like it’s going to rain, but I did bake them and broiled the chicken on low the last 2 minutes of cook time to brown the top.  This is definitely a recipe I’m repeating again soon. I know the pictures don’t make it look appealing for my lack of talent in this shot,  but I swear it was delicious!  Click on Cooking Light’s link for a yummy looking picture.  At only 314 Calories for two pieces of chicken!  Also quick note, I did some pieces with the skin as instructed but left some without the skin and it tasted just as good so for less calories just remove the skin.   Cooking Light Recipe

Preparation
  • 1. Combine first 9 ingredients. Place half of mixture in a zip-top plastic bag; reserve remaining mixture. Add chicken to bag; seal. Chill 2 hours.
  • 2. Preheat grill to medium-high heat.
  • 3. Remove chicken from bag. Sprinkle chicken with salt. Place chicken on a grill rack coated with cooking spray; grill 8 minutes on each side or until done. Serve with reserved mustard mixture.
