Ramen Or Udon Noodle Soup

I came up with a really tasty Ramen/Udon Noodle Soup. I originally got the idea from All Recipes but I changed the whole recipe and made it my own.   The original recipe did not have egg, meat or garlic in it and very little soy sauce.   My 3 year old loved this dish.   I was trying to replicate a good noodle place we go to in the Valley and it came out pretty good.


  • 3 1/2 cups vegetable broth
  • Udon Noodles (in refrigerated section of grocery store) or 2 packages of ramen noodles dispose the seasoning packet
  • 1/3 Cup Soy Sauce
  • 1 teaspoon chili oil, Chili Garlic Sauce or Siracha Sauce (more if you want it hot)
  • 1 teaspoon ginger/garlic paste or you can just mince ginger
  • 3 Boiled Eggs
  • Pork
  • splash of lime juice
  • 2 green onions, sliced
  • Directions

    1. In a medium saucepan combine broth and noodles. Cover and bring to a boil over high heat; stir to break up noodles or if using Udon Noodles it should cook quickly. Reduce heat to medium and add soy sauce, chili oil, ginger, Pork and drop in boiled egg and let that cook until meat is cooked through.  Stir in green onions.  Quick, Easy and tasty!  Serves 2-3 people
