Spinach Bacon Penne Pasta

I love finding ways with Spinach as it is a tasty vegetable and so good for you.  I found this recipe while coming across  Food blogger Savory Sweet Life. I used whole grain pasta and cooked it slightly longer than the normal pasta as grain and wheat pasta’s tend to be more tough.  I loved the bacon and spinach addition as it gave this very simple dish so much flavor.  I think next time I might throw in some cherry tomatoes in there.  The Parmesan cheese was a nice addition too.  This makes for a great quick lunch idea.

Spinach Bacon Penne Pasta Recipe


16 oz package of penne pasta, cooked al dente

1/2 pound bacon, cooked and crumbled

3 large handfuls fresh spinach

2 tablespoons olive oil

2 tablespoons balsamic vinegar

2 cloves fresh garlic, minced

1/2 cup grated Parmesan cheese

Sea Salt and Pepper to taste


In a large sauce pan, toss all ingredients in and cook on medium-high heat until fresh spinach is cooked.  Season with salt and pepper. Enjoy!
