I love to make Sopas the next day with my left overs. I just dump the rest of the chicken left over into my Enchilada sauce and let that cook and get thick.
Pull out your Masa and make your little disk sink in the middle and place Enchilada mixture on top and sprinkle some Ranchero Cheese and there you have the perfect lunch. 🙂
