Eating healthy is an addiction of mine with the exception of the occasional trip to Carney’s for the Red Barron Polish Dog, but can you blame me? I never regret it either! If you are a Southern California resident I recommend this place. Here’s a Vegetable Salad dish I grabbed from Cooking Light.
Pull out of your frig a handful of asparagas, 1 red bell pepper, 1 zuchinni, 1 yellow squash, 1 sweet onion, and a handful of mushroom caps. Wash really good, spray with some olive oil cooking spray and toss on the grill. Let them get grill marks and become soft to the bite or whatever consistency you like to eat your vegetables.Chop to 1 inch pieces and toss together in a bowl 2 TB sherry vin., 1 TB EVO, 1/2 tsp Kosher salt, 1 1/2 tsp honey, 1/2 tsp dijon mustard and some cracked black pepper. Add bits of parsley, basil and chives in with the vegetables and sprinkle some Queso Fresco ontop.
Makes a great side with your favorite steak recipe!
